Every plate of shawarma starts the same way it has since opening day in 2003. Marinated overnight, char-grilled in small batches, sliced fresh to order. Nothing pre-cut and held.

Whole-muscle chicken thigh and seasoned beef marinated for 12+ hours in our seven-spice blend with garlic, lemon, and olive oil.

Cooked in small batches on the char-grill so the edges caramelize against the open flame.

Sliced fresh in thin strips when you order, never pre-cut and held. The outer crust goes straight onto your plate.

Char-Grill, Not a Spit

Why you won't see a spinning cone here.

Most shawarma is made on a vertical spit, stacked in the morning and shaved down all day under a heat lamp. We do it the other way. Whole-muscle chicken thigh and beef are marinated overnight, then char-grilled in small batches over an open flame and sliced fresh the moment you order. No spit cone, no day-old meat under a lamp. It is more work, and it is the reason the edges actually taste char-grilled.

What kind of shawarma do you serve?
Chicken and beef, both char-grilled and sliced fresh to order. Order it as a plate with rice pilaf, garlic sauce, hummus, and warm pita, as a wrap, or in a bowl. A half-chicken, half-beef plate is there for guests who want both.
Do you cook it on a vertical spit or rotisserie?
No. Most shawarma is shaved off a vertical spit; ours is char-grilled in small batches over an open flame and sliced fresh when you order. No spit cone, no day-old meat under a heat lamp. That's what gives the edges their char.
How is your shawarma seasoned?
A house seven-spice blend of allspice, coriander, cinnamon, cumin, and black pepper, finished with fresh garlic and lemon. Most of our spices are sourced directly from Lebanon, and the recipe hasn't changed since 2003.
What comes on the shawarma plate, and what does it cost?
Plates come with rice pilaf, garlic sauce, hummus, and warm pita. Chicken is $20.99, beef is $22.99, and the half-and-half is $21.99. A shawarma wrap is $13.99, and there's a Chicken Shawarma Bowl at $14.99.
Is shawarma gluten-free, and what about allergens?
The meat itself is made without wheat, but plates come with pita and hummus (made with sesame tahini), and the wrap uses lavash, which contains wheat. Our kitchen handles all major allergens, including sesame, and we can't guarantee any item is free from cross-contact. See our allergen guide and tell your server about any allergy before ordering.
Can I get shawarma for delivery or catering?
Order direct through our website for pickup or delivery across Fresno and Clovis, with $10 off orders of $50 or more. For groups, there's a Chicken Shawarma Family-Style plate, and shawarma is a staple of our catering spreads.
